Does the cheese need to be cold when shipped?

Cheese is a very hardy food. In Australia, we often think that it needs to be kept in the fridge when in actual fact, cheese is best kept at 15degs to allow it to continue to ripen. We will include gel ice packs to keep the cheese cool but it won't be delivered "fridge" cold.

Many cheeses actually spend their first few months in caves at 18degs.
